Pico de Gallo:

  • 2 roma tomatoes (diced)
  • ½ small white onion (diced)
  • ¼ cup fresh cilantro (chopped)
  • 1 tbsp lime juice
  • ½ tsp kosher salt
  • ½ tsp ground pepper

Taco Filling:

  • 1 tbsp olive oil
  • 1 medium yellow onion (finely chopped)
  • 1 lb ground beef (80-90%)
  • 3 tbsp tomato paste
  • 1 cup beef broth

Additional Ingredients:

  • 12 soft corn tortillas (or flour tortillas)
  • ¾ cup shredded cheddar jack cheese (or cheddar cheese)
  • ¼ head iceberg lettuce (shredded)
  • ⅓ cup sour cream

Instructions

  1. Taco Seasoning: Combine all taco seasoning ingredients in a small bowl or lidded jar and stir or shake until well-combined.
  2. Beef Broth Mixture: Combine the beef broth and tomato paste in a small bowl or measuring cup and whisk until very smooth.
  3. Pico de Gallo: Make the pico de gallo by combining the tomatoes, onion, cilantro, lime juice, salt, and pepper in a bowl. Adjust seasoning to taste and refrigerate while cooking the filling.
  4. Cook Beef: Heat a skillet, cook onion, add ground beef, and brown meat. Add taco seasoning, stir, then pour in beef broth mixture and simmer until thickened.
  5. Assemble Tacos: Serve the beef filling in warmed tortillas, topped with pico de gallo, cheese, lettuce, and sour cream.
