Instructions
- Prepare the filling: In a mixing bowl, combine the shredded cabbage, shredded carrots, cooked chicken or tofu, minced garlic, soy sauce, sesame oil, ground black pepper, and green onions if using. Mix well until all ingredients are evenly incorporated.
- Assemble the egg rolls: Lay one egg roll wrapper on a flat surface with a corner facing you. Place about 2 tablespoons of the filling mixture in the center of the wrapper. Fold the bottom corner up over the filling, then fold the sides in and roll tightly toward the top corner. Use a little water to moisten and seal the edge. Repeat this process with the remaining wrappers and filling.
- Preheat the air fryer: Set your air fryer to 375°F (190°C) and let it preheat for approximately 5 minutes to ensure even cooking.
- Prepare the air fryer basket: Lightly spray the basket with cooking spray to prevent sticking. Arrange the assembled egg rolls in a single layer without overcrowding to allow air to circulate freely.
- Spray egg rolls for crispiness: Lightly spray the tops of the egg rolls with cooking spray to help them crisp up beautifully during cooking.
- Cook the egg rolls: Air fry the egg rolls for 10 to 12 minutes, flipping them halfway through the cooking time to ensure all sides become golden brown and crispy.
- Cool and serve: Carefully remove the cooked egg rolls from the air fryer and let them cool slightly before serving to enjoy their optimal texture and flavor.

- For a vegetarian version, use firm tofu instead of chicken.
