Rice Paper Wrappers:

  • 6 rice paper wrappers

Filling:

  • 1 medium zucchini, julienned
  • 1 carrot, julienned
  • ½ cup cottage cheese
  • 2 tablespoons chopped cilantro

Additional:

  • Spray oil (olive or avocado recommended)
  • Soy sauce or sweet chili sauce for dipping

Instructions

  1. Soak Rice Paper: Fill a shallow plate with warm water. Soak one rice paper wrapper until pliable, about 15–20 seconds.
  2. Prepare Wrapper: Place the wrapper flat on a plate or board.
  3. Add Vegetables: Add a small portion of zucchini and carrot to the center.
  4. Add Cottage Cheese: Spoon about 1½ tablespoons cottage cheese over the vegetables.
  5. Top with Cilantro: Sprinkle with chopped cilantro.
  6. Roll: Fold in the sides and roll tightly from the bottom to form a sealed roll. Repeat with remaining wrappers.
  7. Preheat Air Fryer: Preheat air fryer to 375°F.
  8. Spray with Oil: Spray each roll lightly with oil and place seam-side down in air fryer basket.
  9. Air Fry: Air fry for 8–10 minutes, flipping halfway, until golden and crisp.
  10. Serve: Serve hot with dipping sauce of choice.
