Rice Paper Wrappers:
- 6 rice paper wrappers
Filling:
- 1 medium zucchini, julienned
- 1 carrot, julienned
- ½ cup cottage cheese
- 2 tablespoons chopped cilantro
Additional:
- Spray oil (olive or avocado recommended)
- Soy sauce or sweet chili sauce for dipping
Instructions
- Soak Rice Paper: Fill a shallow plate with warm water. Soak one rice paper wrapper until pliable, about 15–20 seconds.
- Prepare Wrapper: Place the wrapper flat on a plate or board.
- Add Vegetables: Add a small portion of zucchini and carrot to the center.
- Add Cottage Cheese: Spoon about 1½ tablespoons cottage cheese over the vegetables.
- Top with Cilantro: Sprinkle with chopped cilantro.
- Roll: Fold in the sides and roll tightly from the bottom to form a sealed roll. Repeat with remaining wrappers.
- Preheat Air Fryer: Preheat air fryer to 375°F.
- Spray with Oil: Spray each roll lightly with oil and place seam-side down in air fryer basket.
- Air Fry: Air fry for 8–10 minutes, flipping halfway, until golden and crisp.
- Serve: Serve hot with dipping sauce of choice.
