Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit. Line a large baking sheet with parchment paper and set aside to prepare for baking.
- Prepare Wet Mix: In a large bowl, combine the almond butter, unsweetened applesauce, pure maple syrup, large egg, and vanilla extract. Whisk all these ingredients together until the mixture is smooth and well blended.
- Add Dry Ingredients: Add the oat flour, baking soda, kosher salt, ground cinnamon, ground cloves, and ground nutmeg to the wet mixture. Stir gently until just combined to avoid overmixing. Then fold in the old fashioned oats, freshly grated apple, toasted chopped walnuts, and raisins to distribute evenly.
- Portion Cookies: Using a spoon, scoop about 2 tablespoons of dough per cookie onto the prepared baking sheet, spacing them to allow for slight spreading during baking.
- Bake: Place the baking sheet in the preheated oven and bake the cookies for 10 to 12 minutes. Bake until they are set but remain soft to the touch.
