- 100g mixed nuts (whole hazelnuts, pistachios, almonds, and pecans)
- 50g mixed seeds (sunflower, pumpkin, and linseed)

- 15 cardamom pods, or ½ tsp ground cardamom
- 1 tsp cinnamon
- 2 tsp vanilla extract
- ½ tsp sea salt
Wet Ingredients
- 50ml vegetable oil
- 100ml maple syrup
- 75ml honey
- 2 tbsp stem ginger syrup
Other Ingredients
- 3 balls of stem ginger, chopped
- 300g rolled oats
- 50g soft dried apple rings, roughly chopped
- 50g raisins or dried cranberries
Instructions
- Prepare the Oven and Nuts: Preheat your oven to 160C (140C fan)/gas mark 3 and line a large baking tray with parchment paper. Roughly chop the mixed nuts, keeping plenty of chunky pieces for texture. Crack open the cardamom pods and lightly grind the seeds with a pestle and mortar to release their aroma.
- Mix Wet Ingredients: In a large bowl, combine the vegetable oil, maple syrup, honey, stem ginger syrup, and vanilla extract. Stir until well blended.
- Add Dry Ingredients: To the wet mixture, add the chopped stem ginger, rolled oats, mixed seeds, cinnamon, chopped nuts, ground cardamom, and sea salt. Mix everything thoroughly to ensure the oats and nuts are evenly coated with the syrup mixture.
- Bake the Granola: Spread the granola mixture evenly on the prepared baking tray. Bake in the preheated oven for 20 minutes, then stir the mixture and return it to the oven for an additional 10 minutes to ensure even toasting.
- Cool and Add Dried Fruit: For chunky granola, allow the mixture to cool without stirring so it clumps together, then break into pieces. For a finer texture, stir occasionally as the granola cools. Once cooled, mix in the roughly chopped dried apple rings and raisins or dried cranberries.
- Store Properly: Transfer the finished granola to an airtight container. It will keep fresh for up to one month, making it a convenient option for breakfast or snacking.

- You can substitute the mixed nuts and seeds with your favorites or whatever you have on hand.
- Adjust the amount of cardamom to your taste; it adds a lovely fragrant note but can be strong if overused.
- Be careful not to burn the granola – stir after 20 minutes and keep an eye during the final 10 minutes of baking.
- If you prefer gluten-free, ensure your rolled oats are certified gluten-free.
- The granola thickens and clumps more as it cools, which can be controlled by how much you stir during cooling.
