Salad
- 8 cups Lettuce, washed and chopped
- 1 can Chickpeas, drained and rinsed
- 8 Hard-Boiled Eggs, peeled and halved
- 1 1/2 cups Cooked Chicken, shredded or chopped
- 1/2 cup Radish, sliced
- 1/3 cup Red Onion, thinly sliced
- 1/4 cup Fresh Cilantro, chopped
- 1/4 cup Fresh Parsley, chopped
Instructions
- Prepare the Dressing: In a blender, combine the avocado, olive oil, lime juice, apple cider vinegar, fresh parsley, fresh cilantro, honey, salt, and ground black pepper. Blend until the dressing is very smooth. Add a splash of water as needed to achieve a creamy, pourable consistency.
- Assemble the Salad: In a large bowl or serving platter, arrange the chopped lettuce as the base. Top evenly with chickpeas, hard-boiled eggs, shredded chicken, sliced radishes, and red onion. Sprinkle the remaining fresh cilantro and parsley over the top.
- Serve the Salad: Just before serving, drizzle the prepared avocado green goddess dressing over the salad. Toss gently if desired or serve the dressing on the side for individual portions.
