Ingredients

Scale

Oatmeal Mixture

  • 2 cups 2% Reduced Fat Milk
  • 2 Large Eggs
  • 1/4 cup Brown Sugar
  • 1 teaspoon Pure Vanilla Extract
  • 1 1/2 teaspoons Ground Cinnamon
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Ground Allspice
  • 1/4 teaspoon Ground Ginger
  • 1/8 teaspoon Ground Nutmeg
  • 2 Granny Smith Apples, peeled, cored, and cut into 1/2-inch chunks
  • 2 cups Large Flake Oats
  • 1 teaspoon Baking Powder
  • 1/2 cup Dried Cranberries
  • 1/2 cup Assorted Nuts

Streusel Topping

  • 2 tablespoons Unsalted Butter
  • 2 tablespoons All-Purpose Flour
  • 2 tablespoons Brown Sugar
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 cup Assorted Nuts

Instructions

  1. Preheat oven: Set your oven to 350°F (180°C) to prepare for baking the oatmeal.
  2. Mix wet ingredients and spices: In a medium bowl, whisk together 2% Reduced Fat Milk, eggs, brown sugar, vanilla extract, ground cinnamon, salt, allspice, ground ginger, and nutmeg until fully combined and smooth.
  3. Prepare apples: Peel, core, and cut the Granny Smith apples into 1/2-inch chunks, then add them to the wet mixture bowl.
  4. Add oats and dry ingredients: Whisk in the large flake oats and baking powder, then fold in dried cranberries and assorted nuts. Stir gently to combine all ingredients evenly. Pour the mixture into a greased 9×9-inch or 7×11-inch baking dish.
  5. Prepare streusel topping: In a separate bowl, combine unsalted butter, all-purpose flour, brown sugar, ground cinnamon, and assorted nuts. Use a fork, pastry cutter, or mini food processor to blend until the mixture is crumbly. Sprinkle this evenly over the oatmeal mixture in the baking dish.
  6. Bake: Place the baking dish in the preheated oven and bake for 25 to 28 minutes, or until the oatmeal is set and the streusel topping turns golden brown.
  7. Cool and serve: Remove from the oven and allow the baked oatmeal to cool for 10 minutes. Serve warm, optionally with milk, cream, or yogurt for added creaminess.

Notes

  • For a dairy-free version, substitute the milk with almond milk or another plant-based milk and replace butter with a vegan alternative.
  • Feel free to swap out dried cranberries for other dried fruits like raisins or chopped dates.
  • Assorted nuts can be any combination of your favorites such as walnuts, pecans, or almonds.
  • To add extra sweetness or texture, drizzle with honey or maple syrup when serving.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days and reheat before serving.
