Ingredients
Scale
Fruit
- 3 Yellow Peaches
Filling
- 1/2 cup Walnuts
- 1/4 cup Dried Cranberries
- 1 teaspoon Ground Cinnamon
- 1/2 teaspoon Ground Nutmeg
- 1 tablespoon Pure Maple Syrup
Toppings
- Honey, to taste
- Maple Yogurt, to taste
Instructions
- Preheat Oven: Preheat your oven to 350 degrees F (180 degrees C) to prepare for baking the peaches.
- Prepare Peaches: Cut the 3 yellow peaches in half and remove the pits. Using a melon baller, scoop out a small well in the center of each half to hold the filling mixture.
- Make Filling: In a mixing bowl, combine 1/2 cup walnuts, 1/4 cup dried cranberries, 1 teaspoon ground cinnamon, and 1/2 teaspoon ground nutmeg into a uniform mixture.
- Add Sweetener to Filling: Stir 1 tablespoon of pure maple syrup into the walnut and cranberry mixture to coat evenly and add natural sweetness.
- Stuff Peaches: Fill each peach half’s well with the prepared walnut and cranberry mixture, pressing gently to pack the filling securely.
- Arrange for Baking: Line a baking pan with parchment paper and place the stuffed peach halves on it. Position the pan on the center rack of the oven. On the rack below, place a shallow oven-proof bowl containing about 1/2 inch of water to maintain moisture while baking.
- Bake Peaches: Bake the peaches for 15 to 20 minutes until they become soft and tender, then carefully remove them from the oven.
- Serve: Spoon maple yogurt onto individual serving plates. Place each warm baked peach half on top of the yogurt, then drizzle honey over the peach as desired to finish.
- Enjoy: Serve immediately and enjoy the delightful combination of warm baked peaches with nutty filling and creamy maple yogurt.
Notes
- You can substitute dried cranberries with raisins or dried cherries if preferred.
- For a vegan version, use a plant-based yogurt and substitute honey with additional maple syrup.
- If you don’t have a melon baller, use a small spoon to scoop out the peach centers.
- The bowl of water in the oven helps keep the peaches moist during baking; do not skip this step.
- Adjust the amount of honey and maple yogurt to your taste for sweetness balance.
