Chicken:
- 4 large chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 2 tsp paprika
- 1 tbsp garlic powder
- 1 tbsp Italian seasoning
Toppings:
- ½ cup basil pesto
- 8 oz fresh mozzarella (sliced)
- 1 cup cherry tomatoes (halved)
Instructions
- Preheat the oven: Preheat the oven to 425F and spray a large casserole dish with cooking spray or cover with any other oil.
- Prepare the chicken: Place chicken on the baking dish in a single layer and drizzle with olive oil. Season both sides of the chicken breasts with salt, black pepper, paprika, garlic powder, and Italian seasoning.
- Add pesto and toppings: Cover both sides of the chicken breasts with basil pesto. Top with mozzarella slices and halved cherry tomatoes.
- Bake: Cover the casserole dish with foil and bake in the oven covered for 25 minutes. Uncover and bake for another 10-15 minutes until the mozzarella melts and the chicken is fully cooked throughout.
