Instructions
- Caramelize the Onions: Heat a large skillet over medium-low heat. Melt 1 tablespoon of butter in the skillet then add the thinly sliced sweet yellow onion. Cook, stirring occasionally, for 8-10 minutes until the onions are translucent and caramelized. Remove from skillet and set aside.
- Assemble the Sandwiches: Butter the outside of each slice of Texas toast with about 1/2 tablespoon of butter. On the unbuttered side, layer shredded sharp cheddar cheese, caramelized onions, BBQ brisket, and more cheese, then top with the second slice of bread, buttered side facing out.
- Grill the Sandwiches: Heat the skillet to medium heat. Place 1-2 sandwiches in the pan, depending on size. Cook for 4-5 minutes on the first side until golden brown, then flip and cook 3-4 minutes more on the other side. If the bread browns too quickly, lower the heat to ensure the brisket heats through and the cheese melts fully.
- Serve: Repeat the cooking process with any remaining sandwiches. Cut each sandwich in half and serve hot. Optionally, serve with leftover BBQ brisket juices for dipping.
