Ingredients
Scale
Sandwich Sauce
- 1/4 cup mayonnaise
- 2 tablespoons ketchup
- 1 teaspoon blackened seasoning
- 2 teaspoons lemon juice
Sandwich
- 2 blackened chicken breasts (or thighs)
- 2 kaiser buns
- 1 tablespoon butter
- 1 ounce Colby Jack cheese, sliced
- 2 leaves romaine lettuce
- 1/4 cup sliced onion
- 1/2 avocado, sliced
Instructions
- Prepare the Sandwich Sauce: In a small bowl, whisk together the mayonnaise, ketchup, blackened seasoning, and lemon juice until fully combined. Cover and refrigerate the sauce until you’re ready to assemble the sandwich to allow flavors to meld.
- Heat the Blackened Chicken: If you are using leftover blackened chicken, place a skillet over medium heat. Once hot, cook the chicken for 1 to 2 minutes on each side or until thoroughly heated through. Remove from the skillet and set aside.
- Toast the Kaiser Buns: In the same skillet, melt the butter over medium heat. Place the kaiser buns cut side down into the skillet and cook them until they turn golden brown and toasted, which should take about 1 to 2 minutes. Remove and set aside.
- Assemble the Sandwich: Spread a generous layer of the prepared sandwich sauce onto each toasted bun half. Then, layer the warmed blackened chicken, sliced Colby Jack cheese, romaine lettuce leaves, sliced onion, and avocado slices onto the bottom bun. Top with the other half of the bun to complete the sandwich.
- Serve: Serve the sandwich immediately while warm, and enjoy your flavorful blackened chicken sandwich.
Notes
- You can use either blackened chicken breasts or thighs depending on your preference.
- For a spicier sandwich, add extra blackened seasoning or use a spicy mayonnaise variant.
- If you don’t have leftover blackened chicken, you can blacken fresh chicken breasts using the seasoning and pan-cooking or grilling prior to assembling the sandwich.
- Avocado can be substituted with sliced pickles for a different flavor profile.
- To make the sandwich gluten-free, substitute the kaiser buns with gluten-free bread or buns.
