- ½ teaspoon kosher salt
Cookie Dough:
- ½ cup unsalted butter (room temperature)
- 1½ cups granulated sugar (divided)
- 2 tablespoons milk
- 1 large egg
- ¼ teaspoon purple food dye (optional)
Instructions
- Make the blueberry sauce: In a medium pot over medium-low heat, combine blueberries, sugar, and lemon juice. Cook until thickened. Set aside to cool.
- Combine dry ingredients: Mix flour, cornstarch, baking powder, and salt in a bowl.
- Cream butter and sugar: Beat butter and 1¼ cups sugar until fluffy.
- Add blueberry sauce: Mix 3 tbsp cooled sauce with butter mixture.
- Add liquid ingredients: Incorporate milk, egg, and dye.
- Add dry ingredients: Combine until smooth.
- Chill the dough: Refrigerate for 3 hours.
- Prep tools: Preheat oven to 325ºF and line a baking sheet.
- Pour sugar: Place remaining sugar in a plate.
- Form cookies: Roll dough into balls and coat in sugar.
- Bake: Bake for 15 minutes.
- Cool: Let cool on a wire rack.
