- 2 slices sourdough bread
- 1 tablespoon butter (divided)

Instructions
- Preheat skillet: Heat a skillet over medium to medium-high heat. Add ½ tablespoon of butter and spread it around the skillet until it melts completely to prepare for toasting the bread.
- Toast the bread: Place the sourdough slices in the skillet and let them brown on one side for 2-3 minutes until toasted and golden. Flip them and toast the other side for 1-2 minutes. Once toasted, remove the bread from the skillet and set aside.
- Cook the eggs: Lower the heat to low and add the remaining ½ tablespoon of butter to the skillet. Crack the eggs into the skillet and cook them to your preferred doneness, whether sunny side up, over easy, or fully cooked.
- Assemble the toast: Spread 1 tablespoon of Garlic & Herb Boursin cheese on the top side of each toasted sourdough slice. Add one cooked egg on top of each slice. Then layer with fresh arugula and quartered cherry tomatoes. Drizzle balsamic glaze over the toppings, and season with salt and pepper to taste.
