- 1 Cucumber
- 80 grams Smoked Salmon
Instructions
- Prepare the egg mixture: In a bowl, whisk together 2 eggs, 1 tablespoon of milk, a pinch of salt, and freshly ground black pepper until well combined.
- Cook the omelette in the air fryer: Pour the egg mixture into the air fryer baking accessory. Place it in the air fryer basket and cook at 300°F (150°C) for 5 minutes, stirring a few times with a wooden spoon during cooking to ensure even setting.
- Prepare the vegetables: While the omelette cooks, trim the ends of the spring onion and slice it into rings. Cut the cucumber into long 1cm strips. Halve the tomatoes and slice them thinly.
- Slice the cooked omelette: Once cooked, remove the baking accessory from the air fryer. Scoop out the omelette and cut it into long, thick strips suitable for wrapping.
- Warm the tortillas: Place one whole wheat tortilla in the air fryer basket. Use a double-layer accessory to prevent it from flying around and cook at 300°F (150°C) for 2 minutes to warm. Repeat for the second tortilla.
- Assemble the wraps: Spread goat cheese evenly over each warmed tortilla. Lay the omelette strips on top, followed by tomato slices, cucumber strips, spring onion rings, and half of the smoked salmon on each wrap.
- Roll and serve: Fold the sides of each tortilla inward and roll tightly to enclose the filling. Serve immediately.
