Instructions
- Salt the cabbage: Place the finely sliced cabbage in a large bowl and sprinkle with ½ teaspoon of salt. Toss well to distribute the salt evenly throughout the cabbage. This step helps to soften the cabbage and draw out excess moisture. Set aside for 30 minutes.
- Rinse and drain cabbage: After 30 minutes, rinse the salted cabbage thoroughly under cold running water to remove the excess salt. Then transfer the cabbage to a colander and allow it to drain and dry completely. This prevents the slaw from becoming soggy.
- Toss with dressing: Return the dried cabbage to the bowl. Add the smoky chilli sauce, freshly squeezed lemon juice from half a lemon, and the sliced spring onions. Toss everything together until the cabbage is evenly coated with the sauce and the flavors are well combined.
