Instructions
- Preheat the oven: Set your oven to 425˚F (220˚C) and allow it to fully preheat to ensure the flatbread cooks evenly and crisps up nicely.
- Prepare the flatbreads: Place the flatbreads on a baking sheet. Spread about 2 tablespoons of pesto evenly over each flatbread, creating a flavorful base layer. Sprinkle ½ cup shredded mozzarella over each flatbread to cover the pesto.
- Add toppings: Distribute the shredded chicken evenly over each flatbread. Then, scatter the halved or quartered cherry tomatoes on top. Drizzle a little extra pesto over the toppings to enhance the flavor.
- Bake the flatbreads: Bake in the middle rack of the oven for 10 to 12 minutes. Watch for the mozzarella to melt fully and for the edges of the flatbread to become golden brown and crispy.
