Ingredients
For the Wilted Spinach:
- 1 tbsp olive oil
- 8 oz baby spinach leaves
For the Ricotta Mixture:
- 2 cups ricotta cheese
- Chopped spinach from Step 1
- 2 tbsp lemon juice
- 1/4 cup sliced scallions
- 3 garlic cloves, minced
- 1/2 tsp sea salt
- 1/4 tsp ground black pepper
- 1/4 tsp ground nutmeg
- 1/2 cup grated Parmesan
Instructions
- Step 1: Wilt the Spinach
Preheat the oven to 425°F (220°C). Heat 1 tablespoon of olive oil in a large non-stick pan over medium heat. Add the baby spinach leaves and cook until just wilted, about 1 minute. Remove the spinach, cool slightly, and chop it.
- Step 2: Make the Ricotta Mixture
In a bowl, combine ricotta, chopped spinach, lemon juice, scallions, garlic, salt, pepper, nutmeg, and half of the Parmesan.
- Step 3: Assemble the Dip
Transfer ricotta mixture to a baking dish, drizzle with olive oil, and top with remaining Parmesan.
- Step 4: Bake and Serve
Bake at 425°F for 15 minutes until bubbly. Serve hot with crackers or vegetables.
