Marinade and Chicken
- 3 garlic cloves, crushed
- Good chunk fresh root ginger, grated (approx. 1 inch piece)
- 1 red chilli, deseeded and chopped
- 1 tbsp soy sauce
- 2 tbsp tomato purée
- 2 chicken breasts, cut into chunky strips
Noodles and Vegetables
- 3 blocks dried egg noodles (about 300g total)
- ½ a head broccoli, broken into florets (approx. 150g)
- 3 carrots, cut into thin sticks
- 300g pack beansprouts
- 3 spring onions, halved and sliced into long strips
Cooking
- 1 tbsp vegetable oil
- 1 tbsp oyster sauce
- 2 tbsp water (to mix with oyster sauce)
Instructions
- Prepare the Marinade and Chicken: In a bowl, mix together the crushed garlic, grated ginger, chopped red chilli, soy sauce, and tomato purée. Add the chicken strips to this marinade and toss well to coat. Leave it to marinate while you prepare the other ingredients.
- Cook Noodles and Vegetables: Bring a large pan of water to a boil. Add the dried egg noodles, broccoli florets, and carrot sticks to the boiling water. Cook together for about 4 minutes or until noodles are tender and vegetables have softened. Drain well and set aside.
- Stir-Fry Chicken: Heat the vegetable oil in a wok or large frying pan over medium-high heat. Add the marinated chicken strips along with the marinade, and stir-fry for 4 to 5 minutes until the chicken is fully cooked and lightly browned.
- Combine Ingredients: Add the drained noodles, cooked broccoli and carrots, beansprouts, and spring onion strips to the wok. Toss everything together and stir-fry briefly just to warm through.
- Add Sauce and Serve: Mix the oyster sauce with 2 tablespoons of water, then pour this sauce mixture over the stir-fry just before serving. Stir well to combine all flavors. Serve immediately while hot.
Notes
- For a spicier dish, leave some seeds in the red chilli or add extra chilli according to taste.
- Use fresh egg noodles if available for a softer texture, but dried works well too.
- Vegetables can be varied—snap peas or bell peppers make nice additions.
- For an extra rich flavor, add a splash of sesame oil at the end of cooking.
