Chicken Fajita Dip Recipe

  • Author: Sophie
  • Total Time: 35-45 minutes
  • Yield: Approximately 6-8 servings 1x

Description

This Chicken Fajita Dip is a creamy, flavorful appetizer combining softened cream cheese, sour cream, tender shredded chicken, colorful bell peppers, and a zesty fajita seasoning. Topped with melted cheese and fresh cilantro, it’s perfect for serving warm with tortilla chips, vegetables, or tortillas, making it a crowd-pleasing dish ideal for gatherings or game day snacks.

Ingredients

Scale

Base Ingredients

  • 16 oz cream cheese (softened)
  • 1.5 cups sour cream
  • 2 tbsp fajita seasoning

Vegetables

  • 1 cup finely diced bell pepper (any color)
  • 1/2 cup sweet onion (finely diced)

Protein

  • 2 cups shredded chicken

Toppings

  • 1/2 cup Cheddar or Mexi-blend cheese (shredded)
  • 2 tbsp cilantro (chopped)

Instructions

  1. Mix the base: In a large bowl, combine the softened cream cheese, sour cream, and fajita seasoning. Use a spatula or mixer to blend the ingredients together until the mixture is smooth and creamy, ensuring the seasoning is evenly distributed.
  2. Add vegetables and chicken: Stir in the finely diced bell pepper, sweet onion, and shredded chicken into the cream cheese mixture. Mix thoroughly to combine all ingredients evenly, creating a flavorful and chunky dip base.
  3. Prepare for baking: Spread the dip mixture evenly into a 2-quart casserole dish. Make sure the surface is level for consistent baking. Then, sprinkle the shredded Cheddar or Mexi-blend cheese evenly on top to cover the dip.
  4. Bake the dip: Preheat your oven to 350˚F (175˚C). Cover the casserole dish loosely with aluminum foil to prevent excessive browning and bake for 25 to 35 minutes. The dip is ready when the edges start to bubble, indicating it’s hot and cooked through. For a crispier cheese topping, remove the foil for the last 10 minutes of baking.
  5. Garnish and serve: Once baked, remove the dip from the oven and sprinkle the fresh chopped cilantro evenly over the top. Serve the dip warm with tortilla chips, fresh vegetables, or soft tortillas for dipping.

Notes

  • You can use leftover cooked chicken or rotisserie chicken for convenience.
  • Adjust the fajita seasoning amount to your preferred spice level.
  • For a dairy-free variation, consider using dairy-free cream cheese and sour cream alternatives and vegan cheese.
  • The dip can be kept warm in a slow cooker on low setting during parties.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days and reheat before serving.
