Description
This Christmas leftover sandwich is a deliciously creative way to transform your festive leftovers into a hearty and satisfying meal. Using a crusty white loaf hollowed out and filled with roast turkey, pigs in blankets, stuffing, cranberry sauce, baby spinach, crispy onions, and a tangy mayonnaise and mustard spread, it’s perfect for enjoying the flavors of Christmas in a convenient, shareable sandwich form.

Bread
- 400g white round crusty loaf
Condiments
- 2 tbsp mayonnaise
- 2 tsp English mustard
- 3–4 tbsp cranberry sauce
Filling
- handful of baby spinach
- 3–4 tbsp crispy onions
- 250g leftover roast turkey
- 6 leftover cooked pigs in blankets, halved lengthways
- 150g leftover cooked stuffing
Instructions
- Prep the Loaf: Slice approximately a 3cm thick lid off the top of the crusty loaf. Carefully scoop out most of the bread from the inside of both the loaf and the lid, leaving about a 1cm thick bread layer to maintain structure. Reserve the scooped-out bread for other uses like croutons.
- Make the Spread: Combine the mayonnaise and English mustard thoroughly. Spread 2 tablespoons of this mixture inside the hollowed loaf and 1 tablespoon inside the lid.
- Add Cranberry and Greens: Spoon the majority of the cranberry sauce into the inside of the lid. Then layer half the baby spinach leaves, followed by a sprinkle of crispy onions and half of the cooked turkey on the inside of the loaf base.
- Layer Remaining Fillings: On top of the turkey in the loaf base, add the rest of the cranberry sauce. Then arrange the halved pigs in blankets, leftover stuffing, and the remaining baby spinach.
- Assemble and Chill: Place the stuffed lid back on the loaf and press down lightly to compact the filling. Wrap the entire loaf tightly in cling film or foil and chill in the refrigerator for a minimum of 3 hours to allow the flavors to meld.
- Serve: Remove from the fridge and slice the stuffed loaf into four to six wedges. Serve as a hearty sandwich meal, perfect for enjoying Christmas flavors in a fresh, easy-to-eat format.
