  • Author: Sophie
  • Total Time: 25 minutes
  • Yield: 2 servings 1x

Description

This classic chicken ramen recipe features tender grilled chicken breast, stir-fried vegetables, perfectly cooked ramen noodles, and a soft-boiled egg served in a warm, flavorful chicken broth. Garnished with fresh chives and a sprinkle of chili flakes, this comforting Japanese-inspired dish is quick to prepare and ideal for a satisfying meal any day of the week.

Ingredients

Scale

Protein

  • 2 skinless chicken breasts
  • 1 egg

Vegetables

  • 2 handfuls of stir-fry vegetables (about 200g)
  • Finely chopped chives, to serve

Noodles & Broth

  • 200g ramen noodles
  • 500ml chicken ramen broth

Seasoning

  • Chilli flakes, to serve

Instructions

  1. Cook the chicken: Heat a griddle or large frying pan over medium heat. Add the skinless chicken breasts and cook for 5-7 minutes until golden brown on one side. Flip the chicken and cook for an additional 4-5 minutes until thoroughly cooked. Remove from the pan, thinly slice, and set aside.
  2. Prepare the vegetables: In the same pan, add the stir-fry vegetables and cook for about 2 minutes until they soften slightly but still retain some crunch. Remove from heat and set aside.
  3. Cook the noodles and egg: Bring a pot of water to a boil and cook the ramen noodles following the package instructions. During the last 5-6 minutes of boiling, gently add the egg to the water and cook to your preferred yolk consistency (5 minutes for a runnier yolk, 6 minutes for slightly firmer). Drain the noodles and egg, peel the egg, cut it in half, and set aside.
  4. Heat the broth: Pour the chicken ramen broth into a saucepan and warm it over medium heat until it is hot but not boiling. Maintain the temperature to keep the broth savory and flavorful.
  5. Assemble the ramen bowls: Divide the cooked ramen noodles evenly between two deep bowls. Arrange the stir-fried vegetables, sliced chicken, and halved egg on top. Carefully ladle the hot broth over the contents of each bowl.
  6. Add garnishes: Sprinkle finely chopped chives and chili flakes over the ramen to finish. Serve immediately while hot for the best experience.

Notes

  • Adjust the chili flakes amount according to your spice preference.
  • You can substitute stir-fry vegetables with any seasonal vegetables you prefer.
  • For a richer broth, consider adding a splash of soy sauce or sesame oil.
  • Soft-boiled eggs can be prepared ahead of time and refrigerated before serving.
  • Ensure the chicken is fully cooked to an internal temperature of 165°F (74°C) for safety.
