Instructions
- Cook the chicken: Heat a griddle or large frying pan over medium heat. Add the skinless chicken breasts and cook for 5-7 minutes until golden brown on one side. Flip the chicken and cook for an additional 4-5 minutes until thoroughly cooked. Remove from the pan, thinly slice, and set aside.
- Prepare the vegetables: In the same pan, add the stir-fry vegetables and cook for about 2 minutes until they soften slightly but still retain some crunch. Remove from heat and set aside.
- Cook the noodles and egg: Bring a pot of water to a boil and cook the ramen noodles following the package instructions. During the last 5-6 minutes of boiling, gently add the egg to the water and cook to your preferred yolk consistency (5 minutes for a runnier yolk, 6 minutes for slightly firmer). Drain the noodles and egg, peel the egg, cut it in half, and set aside.
- Heat the broth: Pour the chicken ramen broth into a saucepan and warm it over medium heat until it is hot but not boiling. Maintain the temperature to keep the broth savory and flavorful.
- Assemble the ramen bowls: Divide the cooked ramen noodles evenly between two deep bowls. Arrange the stir-fried vegetables, sliced chicken, and halved egg on top. Carefully ladle the hot broth over the contents of each bowl.
- Add garnishes: Sprinkle finely chopped chives and chili flakes over the ramen to finish. Serve immediately while hot for the best experience.
