  • 50g butter, plus extra to serve (optional)
  • 1 small onion, sliced
  • 400ml whole milk
  • Large pinch of ground cloves
  • 2 stale croissants, roughly sliced (about 80g)

Instructions

  1. Prepare the onion: Melt the butter in a pan over low to medium heat. Add the sliced onion, cover, and cook gently for 10 minutes until the onion is softened but not browned.
  2. Simmer with milk and cloves: Pour in the whole milk and add a large pinch of ground cloves. Simmer the mixture uncovered for 15 minutes, stirring occasionally to prevent sticking and to infuse the flavors.
  3. Add croissants: Add the roughly sliced stale croissants to the pan. Stir to allow the bread to absorb the milk and soften.
  4. Blend the sauce: Transfer the mixture to a food processor and blitz until smooth and creamy.
  5. Reheat and thicken: Pour the blended sauce back into the pan and gently simmer over low to medium heat until thickened and heated through. If the sauce becomes too thick, add a splash of milk to loosen it.
  6. Season and serve: Season with salt and pepper to taste. Serve the warm croissant bread sauce alongside roast turkey and trimmings, with a knob of butter on top if desired.

Notes

  • Use stale croissants for the best texture and absorption of the milk.
  • Do not brown the onion; it should be softened but pale to keep the sauce delicate in flavor.
  • The sauce can be made ahead and kept chilled for up to two days. Reheat gently before serving.
