Dry Ingredients:
- 1/4 cup dark cocoa powder
- 1 1/2 cups cake flour
- 2 teaspoons baking powder
- 1/4 teaspoons salt
Wet Ingredients:
- 1/2 cup butter
- 1 cup granulated sugar
- 2 large eggs (separated)
- 1/2 cup strongly brewed coffee
- 1/4 teaspoons vanilla extract
Toppings:
- Chocolate whipped cream
- Chocolate sauce
Instructions
- Prepare Dry Ingredients: Whisk together the dark cocoa powder, cake flour, baking powder, and salt. Set aside.
- Mix Wet Ingredients: In a large bowl, cream the butter and sugar until fluffy. Add the egg yolks and mix well.
- Combine Ingredients: Add half of the dry ingredients and half of the coffee to the wet mixture. Mix well. Add the remaining dry ingredients, coffee, and vanilla extract. Mix until just moistened.
- Cook Waffles: Preheat the waffle maker and cook the waffles according to the manufacturer’s instructions. Cook for about 3 minutes or until done.
- Serve: Allow the waffles to cool slightly, then top with chocolate whipped cream and chocolate sauce.
