  • 1 1/2 cups cake flour
  • 2 teaspoons baking powder
  • 1/4 teaspoons salt

Wet Ingredients:

  • 1/2 cup butter
  • 1 cup granulated sugar
  • 2 large eggs (separated)
  • 1/2 cup strongly brewed coffee
  • 1/4 teaspoons vanilla extract

Toppings:

  • Chocolate whipped cream
  • Chocolate sauce

Instructions

  1. Prepare Dry Ingredients: Whisk together the dark cocoa powder, cake flour, baking powder, and salt. Set aside.
  2. Mix Wet Ingredients: In a large bowl, cream the butter and sugar until fluffy. Add the egg yolks and mix well.
  3. Combine Ingredients: Add half of the dry ingredients and half of the coffee to the wet mixture. Mix well. Add the remaining dry ingredients, coffee, and vanilla extract. Mix until just moistened.
  4. Cook Waffles: Preheat the waffle maker and cook the waffles according to the manufacturer’s instructions. Cook for about 3 minutes or until done.
  5. Serve: Allow the waffles to cool slightly, then top with chocolate whipped cream and chocolate sauce.
