Delicious Desi Chow Mein recipe that combines flavorful noodles with marinated chicken and a variety of fresh vegetables, all tossed in a savory sauce.

Noodles:

  • 200 g noodles

Marinated Chicken:

  • 200 g boneless chicken (sliced)
  • 1/3 tsp salt (divided)
  • 1/2 tsp white pepper
  • 1 tsp regular soy sauce
  • 1 tsp cornflour (cornstarch)

Vegetables:

  • 1 garlic clove (crushed)
  • 1 small green bell pepper (sliced)
  • 2 carrots (sliced)
  • 1/2 cup cabbage (sliced)
  • 1 red onion (sliced – optional)
  • 3 spring onions (green part only, sliced)
  • 12 green chilies (deseeded & sliced)

Sauces and Seasonings:

  • 4 tbsp oil (divided)
  • 1 tbsp toasted sesame oil
  • 2 tbsp regular soy sauce
  • 1 tbsp white vinegar
  • 1 tbsp sriracha/chili sauce
  • 1 tbsp oyster sauce
  • 1 tbsp chili garlic sauce
  • 1/4 chicken cube
  • 1/2 tsp grounded black pepper
  • 1/2 tsp red chili flakes
  • 1/2 tsp brown sugar
  • 1 tsp toasted sesame oil

Instructions

  1. Marinate the Chicken: Combine chicken with white pepper, salt, cornflour, and soy sauce. Set aside.
  2. Prepare Chow Mein Sauce: Mix together toasted sesame oil, soy sauce, white vinegar, sriracha, oyster sauce, chili garlic sauce, chicken cube, black pepper, red chili flakes, brown sugar, and toasted sesame oil. Set aside.
  3. Boil Noodles: Cook noodles according to package instructions. Drain and rinse with cold water. Toss with sesame oil.
  4. Prepare Vegetables: Stir-fry carrots, bell pepper, cabbage, and onion. Add green chili. Set aside.
  5. Cook Chicken: Sauté garlic, then add marinated chicken. Cook, then add sauce.
  6. Combine: Add noodles to the pan, mix well. Adjust seasoning. Add spring onions.
  7. Serve: Garnish with sesame seeds and serve.

Notes

  • Adjust spice levels according to preference.
  • Feel free to add or substitute vegetables as desired.
  • For a vegetarian version, replace chicken with tofu or more vegetables.
