For the Soup:
- 3 tbsp olive oil (or pork lard)
- 2 yellow onions (diced)
- 2 garlic cloves (minced)
- 1 tbsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp chili flakes (adjust for heat)
- 2 tsp salt
- 1/2 tsp ground black pepper
- 1 tbsp smoked paprika
- 2 tbsp tomato paste
- 10 oz ground beef (300g)
- 10 oz ground pork (300g)
- 3 cups tomato sauce
- 2 cups heavy cream
- 2 cups chicken broth
- 1 tsp sugar
- 1 cup water
For Serving:
- 8 oz lasagna sheets (broken into pieces)
- 1 cup shredded mozzarella
- Ricotta cheese and fresh basil for serving (optional)
- Chopped Parsley (optional)
Instructions
- Sauté the Veggies: In a large pot, heat the olive oil or lard over medium heat. Add the diced onions and minced garlic, sautéing for about 5 minutes until the onions become soft and translucent.
- Season and Brown the Meat: Stir in the garlic powder, oregano, chili flakes, 1 tsp salt, pepper, and smoked paprika. Cook for 1-2 minutes until fragrant. Add the tomato paste and mix well, letting it cook for another minute. Add the ground beef and pork, breaking them up as they cook, and sauté until browned. Cook for 5 more minutes.
- Build the Soup Base: Pour in the tomato sauce, heavy cream, chicken broth, and water. Stir everything together, making sure the liquid is well combined with the meat and spices. Add 1 tsp of sugar to balance out the acidity.
- Add the Pasta: Once the soup begins to simmer, add the broken lasagna sheets. Stir occasionally and cook uncovered for 20-30 minutes, or until the pasta is tender.
- Finish with Cheese: Remove the soup from heat and stir in the shredded mozzarella, allowing it to melt into the soup. Optional: add in chopped up parsley & mix well.
