Seasoning:
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon chipotle chili powder (optional)
Additional Ingredients:
- 1/2 cup salsa
- 1 tablespoon olive oil
- 10 corn tortillas
- 2.5 cups shredded Monterey Jack or Mexican cheese
Instructions
- Preheat Oven: Preheat oven to 450F.
- Mix Chicken and Seasonings: In a large bowl, combine shredded chicken, smoked paprika, garlic powder, onion powder, chipotle chili powder, and salsa.
- Prepare Tortillas: Wrap corn tortillas in a damp paper towel and microwave for 30-60 seconds until pliable.
- Assemble Tacos: Brush one side of a tortilla with olive oil. Add cheese, chicken, and more cheese on one half of the tortilla. Fold over the filling.
- Bake: Arrange tacos on a baking sheet and bake for 16 minutes, flipping halfway through until golden brown. Let rest for 3 minutes before serving.
