- 2 to 3 medium ripe bananas (about 400 g after peeling)
- 1 large egg

Instructions
- Prepare the Pan: Preheat your oven to 350°F (175°C). Spray a 9 x 5-inch loaf pan with cooking oil and line it with a piece of parchment paper for easy removal later.
- Mash Bananas and Mix Wet Ingredients: In a large bowl, mash the ripe bananas with a fork until you have about 1 and ¾ cups of mashed banana. Add the large egg, vanilla extract, ground cinnamon, and ground nutmeg, then whisk everything together until combined. Pour in the melted butter and whisk again thoroughly.
- Add Dry Ingredients: Stir in the brown sugar, baking powder, baking soda, and kosher salt using a large spatula. Gradually add the all-purpose flour and fold it into the mixture until all the dry ingredients are just absorbed, being careful not to overmix.
- Bake the Bread: Pour the batter evenly into the prepared loaf pan. Place it in the preheated oven and bake for 50 to 60 minutes, or until a toothpick or skewer inserted into the center comes out clean.
- Cool and Serve: Remove the banana bread from the oven and let it cool in the pan for 15 minutes. Then, lift the loaf out using the edges of the parchment paper and transfer it to a wire rack. Peel off the parchment paper and allow the bread to cool an additional 15 minutes before slicing and serving.
