Instructions
- Prepare the Vegetables: Cut each onion into eight wedges, roughly chop the carrots, and cut the potatoes into large chunks. Boil water in a kettle to use later.
- Brown the Mince: Heat a large non-stick pan over medium heat. Add the minced beef and fry quickly, stirring constantly, until evenly browned. This ensures the meat is cooked through and develops a rich flavor.
- Add Stock Cubes and Vegetables: Crumble in the beef stock cubes and mix well to combine. Then add the prepared onions, carrots, and potatoes. Stir everything together so the vegetables are coated with the meat and stock flavors.
- Add Hot Water and Simmer: Pour in 900ml (about 1½ pints) of hot water from the kettle. Bring the mixture to a boil, then reduce the heat to low. Cover the pan and simmer gently for 25-30 minutes, or until the vegetables are tender and cooked through.
- Finish with Baked Beans and Seasoning: Stir in the baked beans and add a generous splash of Worcestershire sauce. Heat through until everything is piping hot. Taste the hotpot and season with salt and pepper as needed.
- Garnish and Serve: Scatter the chopped parsley over the hotpot for freshness and added flavor. Serve the hotpot in bowls, placing the Worcestershire sauce bottle on the table for anyone who wants additional seasoning.
