Brownie Base
- 150g butter
- 75g light soft brown sugar
- 150g plain chocolate, broken into pieces

Instructions
- Preheat and Prepare: Heat the oven to 180C/160C fan/gas mark 4. Line a 20cm square cake tin with baking parchment for easy removal of the brownies after baking.
- Melt Chocolate Mixture: Gently melt the butter, light soft brown sugar, plain chocolate pieces, and golden syrup together in a pan over low heat until smooth and fully combined. Remove from heat once melted.
- Whisk Eggs and Sugar: In a large bowl, whisk the eggs and golden caster sugar together until the mixture becomes light and fluffy. This step is important for achieving the right texture and usually takes a few minutes using a hand or stand mixer.
- Add Vanilla and Dry Ingredients: Stir in the vanilla extract. Sift over the plain flour, baking powder, and cocoa powder to the egg mixture, then quickly fold everything together with the melted chocolate mixture until just combined.
- Layer the Brownie Batter: Pour half of the brownie batter into the prepared baking tin, spreading evenly. Spoon dollops of dulce de leche, caramel, or chocolate hazelnut spread over this layer. Then, spoon the remaining brownie batter on top. Add extra dollops of the spread if desired for a more pronounced gooey effect.
- Bake: Bake in the preheated oven for 30 minutes. The top should be set and slightly cracked, while the inside remains soft with a slight wobble.
- Cool and Serve: Remove from the oven and let the brownies cool completely in the tin to firm up. Once cooled, dust the tops with cocoa powder or icing sugar. For serving as a dessert, drizzle with additional caramel if preferred. Cut into squares and enjoy.
