- Prepare the Pan: Spray a 9×11 inch baking pan with nonstick cooking spray and set aside to ensure the treats don’t stick after cooling.
- Melt Butter and Marshmallows: In a large pot, melt ¾ cup salted butter over medium heat. Add almost all the mini marshmallows (about two bags), leaving 2 cups of marshmallows out for later. Stir gently to combine.
- Cook the Mixture: Reduce heat to medium-low and stir continuously until marshmallows melt completely, about 3-4 minutes. Stay attentive to prevent burning.
- Add Vanilla: Remove the pot from heat and stir in 1 tablespoon of vanilla extract to infuse flavor.
- Mix in Cereal and Remaining Marshmallows: Add 12 cups of Rice Krispies cereal along with the reserved 2 cups of mini marshmallows to the pot. Gently mix to coat the cereal evenly with the melted marshmallow mixture.
- Transfer to Pan: Scoop the mixture into the prepared pan. Lightly coat a silicone spatula with nonstick spray and use it to spread the mixture evenly.
- Press the Treats: For softer treats, press mixture lightly into the pan. For denser, thicker treats, press firmly. This controls texture according to preference.
- Chill: Cover the pan with plastic wrap and let it sit at room temperature or in the fridge for at least an hour. Overnight chilling in the fridge is recommended for clean slicing.
- Slice and Serve: Slice into 12 large or 24 smaller servings depending on desired size, then serve and enjoy your jumbo Rice Krispie treats!
