Beef Chops & Potatoes

  • 4 beef chops, bone-in or boneless
  • 1.5 lbs Yukon Gold or red potatoes, diced

Seasoning & Oil

  • 2 tbsp olive oil (divided)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp melted unsalted butter

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper to prevent sticking and for easy cleanup.
  2. Prepare Potatoes: Pat the beef chops dry with paper towels. In a large bowl, toss the diced potatoes with 1 tablespoon of olive oil to lightly coat them and enhance browning during roasting.
  3. Mix Seasoning: In a small bowl, combine garlic powder, paprika, dried rosemary, dried thyme, salt, and black pepper to create a robust seasoning blend.
  4. Season Beef & Potatoes: Brush the beef chops with the remaining 1 tablespoon of olive oil, then generously sprinkle half of the seasoning blend over the chops. Add the remaining half of the seasoning mix to the potatoes and toss well to ensure even coating.
  5. Arrange on Sheet Pan: Spread the seasoned potatoes in a single layer on the prepared sheet pan. Nestle the beef chops among the potatoes, making sure to leave space around each piece for even cooking.
  6. First Roast: Roast in the preheated oven for 20 minutes, allowing the potatoes to start softening and the beef chops to begin cooking.
  7. Flip & Baste: Carefully remove the pan from the oven. Flip the beef chops over, stir the potatoes to ensure even cooking, and baste the chops with melted butter to add richness and help form a flavorful crust.
  8. Final Roast: Return the pan to the oven and continue roasting for another 15–25 minutes, or until the beef reaches your desired level of doneness (130-135°F for medium-rare) and the potatoes are tender and golden brown.
