Chipotle Beer Cheese

  • 1 cup your favorite beer (preferably a lighter wheat beer)
  • 2 chipotle peppers in adobo, diced
  • 1 tablespoon adobo sauce from the can of chipotles
  • 16 ounces freshly grated white cheddar cheese

Instructions

  1. Activate yeast: In the bowl of your electric stand mixer fitted with a dough hook, combine warm water, honey, and yeast. Let it sit for 5 to 10 minutes until foamy, indicating the yeast is active.
  2. Make dough and first rise: Add flour, kosher salt, and melted butter to the yeast mixture. Mix with the dough hook until thoroughly combined into a smooth dough. Cover the bowl with a towel and let the dough rise in a warm place for about 1 hour or until it has doubled in size.
  3. Shape pretzel nuggets: Punch down the risen dough and turn it onto a lightly floured surface. Cut the dough into 12 equal pieces. Roll each piece into a rope about 1 inch thick, then cut each rope into 1-inch pieces to create small dough nuggets.
