  • 150g mature cheddar, grated
  • 180g frozen peas
  • handful of parsley, chopped

  • 300g fish pie mix (smoked fish, white fish, and salmon)

Instructions

  1. Make the sauce: Pour the milk into a large pan and add the plain flour and butter. Place over medium heat and whisk continuously until the mixture becomes a smooth, thick white sauce. Remove from the heat, then stir in the Dijon mustard, most of the grated mature cheddar (reserve a handful for topping), frozen peas, and chopped parsley.
  2. Cook the pasta: Meanwhile, bring a large pan of water to a boil. Add the macaroni and cook according to the package instructions until just tender. Drain the pasta well.
  3. Combine pasta and sauce with fish: Preheat the oven to 200°C (180°C fan)/gas mark 6. Stir the drained pasta into the cheese sauce. Add half of the fish pie mix to the sauce and pasta, folding everything together gently.
  4. Assemble the dish: Transfer the pasta, sauce, and fish mixture into a large baking dish. Top with the remaining fish, pressing it slightly into the pasta. Scatter the reserved grated cheese evenly on top.
  5. Bake: Place the baking dish in the preheated oven and bake for 30 minutes until the top is golden and bubbly.
  6. Serve: Remove from the oven and serve hot, optionally accompanied by a fresh green salad.
  7. Storage and reheating: This dish can be chilled and stored in the fridge for up to three days or frozen for up to one month. When ready to eat, defrost in the fridge overnight if frozen and reheat thoroughly in a microwave or oven until piping hot.
