Instructions
- Preheat Oven: Preheat your oven to 350℉ (175℃). Prepare a round pizza pan by spraying it with non-stick cooking spray or lining it with parchment paper to prevent sticking.
- Prepare Cookie Dough Base: Allow the 16 oz refrigerated cookie dough to soften at room temperature for about 1 hour. Use your palms and fingertips to press the dough evenly into the shape of the pizza pan. Bake for 15 minutes or until the cookie surface is golden brown. Once baked, remove from oven and let it cool completely before frosting.
- Make Cream Cheese Frosting: In a large bowl, combine the softened 8 oz cream cheese, 2 tablespoons unsalted butter, 2 cups powdered sugar, and 2 teaspoons vanilla extract. Use a hand mixer to beat the mixture; it will start clumpy but will become smooth and creamy after 2–3 minutes.
- Frost the Cookie Base: Using a spatula, spread the cream cheese frosting evenly over the cooled sugar cookie crust. Leave a small border of cookie exposed around the edges for a neat presentation.
- Prepare and Arrange Fruit: Wash and slice the strawberries and kiwis. Drain and pat dry the canned mandarin orange sections. Arrange the fruits in concentric circles starting from the outer edge of the pizza and working your way toward the center. Use the blueberries as accents between the other fruit slices for color variety.
