Burger Patties

  • 2 tbsp olive oil
  • 2 onions, finely chopped
  • 250g bag spinach
  • 5 slices white bread, blitzed into breadcrumbs (or 150g dried breadcrumbs)
  • Good grating of fresh nutmeg
  • 100g mature cheddar, grated
  • 40g Parmesan, finely grated
  • 12 large eggs, beaten
  • 3 tbsp plain flour

To Serve

  • 6 crusty bread rolls
  • 4 ripe, juicy tomatoes, thickly sliced
  • Good-quality ketchup or other relish
  • Sweet potato fries (optional)

Instructions

  1. Prepare the onions: Heat half the olive oil in a frying pan over medium heat. Gently fry the finely chopped onions for about 10 minutes until they are pale and soft. Remove from heat and allow to cool slightly.
  2. Process the spinach: Finely chop the spinach using a food processor and transfer it into a large mixing bowl.
  3. Mix the patties: Add the cooled onions, breadcrumbs, freshly grated nutmeg, mature cheddar, and Parmesan to the chopped spinach. Mash the mixture together thoroughly to combine the ingredients.
  4. Bind the mixture: Gradually add the beaten eggs a little at a time to the mixture, mixing well after each addition until the mixture holds together well. You may not need to use all of the egg.
  5. Form the burgers: Divide the mixture into eight equal portions and shape each into a fat burger patty. To prevent sticking, flour your hands before shaping.
  6. Coat the patties: Place the plain flour in a shallow bowl, season it well with salt and pepper, and dip each burger into the flour to coat evenly. Layer the burgers between sheets of baking parchment in a plastic container and refrigerate until ready to cook, or freeze for later.
  7. Cook the patties: Heat the remaining olive oil in the frying pan over medium heat. Fry the burgers for about 5 minutes on each side until they are browned all over and cooked through.
  8. Assemble the burgers: Place each cooked green burger patty inside crusty bread rolls. Add thick slices of ripe tomato and a generous dollop of ketchup or your favorite relish.
  9. Serve: Serve the green burgers with sweet potato fries on the side for a complete, tasty meal.
