  • 812 cherry tomatoes, sliced

Instructions

  1. Toast bread: Toast the three slices of wholegrain or rye bread until golden and crispy. This will add texture and provide a sturdy base for the sandwich layers.
  2. Spread houmous: Evenly spread 3 tablespoons of ready-made houmous over one side of each toasted bread slice. The houmous adds creaminess and binds the sandwich ingredients together.
  3. Assemble first layer: On one slice of the houmous-coated bread, arrange half of the sliced avocado, a handful of rocket leaves, and half of the sliced cherry tomatoes. Season lightly with freshly ground pepper for added flavor.
  4. Add second bread slice: Place another slice of houmous-spread bread on top of the first layer. This acts as a middle layer, adding bulk and more spread.
  5. Assemble second layer: Repeat the layering by piling the remaining avocado slices, rocket leaves, and cherry tomatoes on top of the second bread slice. Again, season with pepper to taste.
