- 2 large boneless skinless chicken breasts (cut in half horizontally)
- 2 teaspoons Italian seasoning
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
For the Bruschetta:
- 4 Roma tomatoes (seeded & finely chopped)
- ¼ red onion (finely chopped)
- 3 cloves garlic (finely chopped)
- 4 Tablespoons fresh basil (shredded)
- 2 Tablespoons olive oil
- Salt (to taste)
- ½ cup Parmesan cheese (finely shredded)
- ¼ cup balsamic glaze
Instructions
- Prepare the Chicken: Brush olive oil over both sides of chicken breasts. Season with Italian seasoning, salt, and pepper on both sides.
- Grill the Chicken: Cook the chicken on a medium-high heat gas grill, grill pan, or skillet for 5-6 minutes per side or until the internal temperature reaches 165°F.
- Make the Bruschetta: Mix together tomatoes, red onion, garlic, basil, olive oil, and salt. Alternatively, use store-bought bruschetta.
- Assemble: Remove cooked chicken from heat, top with bruschetta mixture, and drizzle with balsamic glaze.
