- 1–1.5 lbs chicken breast or boneless skinless chicken thighs, cut into cubes
- 1/4 tsp salt
- 1 tbs avocado oil
For the Sheet Pan:
- 1 red bell pepper, diced
- 1 orange bell pepper, diced
- 1/2 red onion, cut into chunks
- 1 cup pineapple chunks
- 1/2 cup Primal Kitchen Foods Hawaiian BBQ Sauce, plus more for drizzling
- Juice of 1 lime
- Cilantro and white sesame seeds for garnish
Instructions
- Preheat the oven: Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and spray with avocado oil.
- Prepare the Chicken: Season the chicken with salt, pepper, and avocado oil in a mixing bowl.
- Combine Ingredients: Add the diced bell peppers, red onion, and Hawaiian BBQ sauce to the chicken. Toss to coat everything evenly.
- Bake: Transfer the mixture to the prepared baking sheet. Bake for 20 minutes, then add the pineapple chunks and bake for an additional 10-20 minutes until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
