For the Burgers

  • 500g lean top-quality minced beef, preferably freshly minced
  • 1 small onion, grated
  • 2 tsp Worcestershire sauce
  • 4 large basil leaves
  • 50g brie, cut into 4 slices
  • 2 sundried tomatoes in oil, halved (plus oil for brushing)

Instructions

  1. Prepare the Mince: Remove the mince from the fridge 30 minutes before cooking to allow it to reach room temperature. In a bowl, combine the minced beef with 1 teaspoon of sea salt, freshly ground pepper, grated onion, and Worcestershire sauce. Mix well using your clean hands to ensure all ingredients are evenly incorporated.
  2. Shape the Patties: Divide the mixture into 4 equal-sized balls. Wrap each slice of brie with a basil leaf and place it along with a half piece of sundried tomato in the center of each ball. Press the meat around the filling and reshape into flat patties about 1.5 cm thick.
  3. Preheat the Grill: Heat the grill for 5 minutes, setting the rack to its highest level to ensure the burgers cook under the hottest part of the grill.
  4. Grill the Burgers (First Side): Place the patties evenly on the grill rack. Brush the tops with the oil from the sundried tomatoes and season with pepper and a little salt. Grill for 3 minutes for medium-rare or 5 minutes if you prefer well-done burgers.
  5. Grill the Burgers (Second Side): Flip the patties over, brush with more sundried tomato oil, season again, and grill for the same amount of time as the first side (3 or 5 minutes depending on doneness preference).
  6. Rest and Serve: Allow the burgers to rest for 3 minutes off the heat to let the juices redistribute. Serve the burgers in crusty buns layered with salad leaves, cornichons, sliced tomatoes, and relish if desired.
