- Position the mango: Place the mango on a cutting surface with one of the pointed ends facing you. The two wider sides, known as the cheeks, should be on either side.
- Remove the first cheek: Using a serrated or smooth knife, slice downwards starting near the top of the mango, guiding the knife just around the large stone in the center to cut off one cheek.
- Remove the second cheek: Rotate the mango and repeat the slicing on the opposite side to remove the other cheek.
- Score the mango flesh: Take one mango cheek and carefully score the flesh in diagonal lines along its length, being sure not to cut through the skin.
- Make the crosshatch pattern: Turn the mango cheek 90 degrees and score diagonally again to create a criss-cross pattern of cubes.
- Invert the mango cheek: Push gently on the skin side with your fingers so that the scored mango cubes pop outward, forming a hedgehog pattern.
- Cut out the mango cubes: Slice off the popped-out mango chunks carefully with a knife, separating the fruit from the skin.
- Remove remaining flesh around the stone: Cut away the remaining flesh around the curved stone in the center, scoring the pieces as before and carefully running your knife along the skin to release the fruit. Collect all mango pieces together.
