Graham Cracker Crust:

  • 1012 graham crackers
  • 4 tablespoons melted butter

Cheesecake Filling:

  • 16 oz cream cheese
  • 1 ¼ cup granulated sugar + 1 tablespoon
  • 1 cup sour cream
  • 1 cup heavy cream
  • 4 tablespoons cornstarch
  • 2 teaspoons pure vanilla extract
  • 2 cups pitted canned cherries

Instructions

  1. Prepare Crust: Grease a 7-inch deep springform pan with butter. Crush graham crackers, mix with melted butter, and press into pan. Chill.
  2. Make Filling: Beat cream cheese and sugar, add sour cream and heavy cream, mix in vanilla and cornstarch.
  3. Assembly: Pour batter into pan. Blend cherries with sugar to make sauce, swirl on top of batter.
  4. Cook in Instant Pot: Pressure cook cheesecake in Instant Pot with water for 40 minutes.
