- 1 tablespoon olive oil
- 1/2 cup white rice, uncooked
- 1 lb ground beef
- 3 cans stewed tomatoes, 14 oz each
- 2 tablespoons garlic, minced (adjustable to taste)
- 1 white onion, diced
- 2 green bell peppers, deseeded and diced
- 4 cups beef broth
- 2 tablespoons paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Saute Ground Beef and Onions: Click the sauté button on the Instant Pot to activate sauté mode. Add olive oil, diced onion, and ground beef to the pot. Cook, stirring occasionally, until the ground beef is fully browned and the onions are softened.
- Add Seasonings: Stir in minced garlic, salt, black pepper, and paprika. Mix well to combine all the spices evenly with the meat and onions.
- Add Vegetables and Rice: Add the diced green bell peppers, all three cans of stewed tomatoes, and 1/2 cup of uncooked white rice to the pot. Stir thoroughly to distribute ingredients evenly.
- Pour in Broth and Seal Instant Pot: Pour 4 cups of beef broth into the mixture. Place the lid on the Instant Pot securely and set the valve to the sealed position to prepare for pressure cooking.
- Pressure Cook Soup: Set the Instant Pot to pressure cook (manual) on high pressure for 5 minutes. During this time, the rice will cook fully as the pot builds pressure and maintains heat.
- Release Pressure and Serve: Once the cooking time is complete and the Instant Pot beeps, carefully release the pressure valve. Remove the lid and stir the soup before serving warm.
Notes
- If you prefer a thicker soup, reduce the broth to 3 cups or simmer the soup using sauté mode after pressure cooking to reduce liquid.
- Adjust garlic quantity based on your taste preferences.
- For a spicier kick, add some crushed red pepper flakes or a dash of cayenne pepper along with the paprika.
- Use lean ground beef for a healthier variation.
- Make sure to properly seal the Instant Pot lid to build pressure effectively.
