  • 2 tablespoons hoisin sauce

Vegetables

  • 1 red bell pepper, quartered
  • 1 green bell pepper, quartered
  • 1 bundle spring onion, quartered

Instructions

  1. Prepare Vegetables: Chop the red and green bell peppers and the spring onions into quarters and set them aside for later use.
  2. Cook Beef: Place the stir fry beef into the instant pot along with 3/4 cup water and 1 tablespoon of soy sauce. Seal the lid and set the instant pot to high pressure for 20 minutes. After cooking, allow the pressure to release naturally for 5 minutes, then perform a quick release to fully depressurize.
  3. Drain Beef Juice: Remove the beef from the instant pot and drain the cooking liquid to prepare for the next step.
  4. Make Sauce: In a bowl, combine the remaining 4 tablespoons soy sauce, brown sugar, minced garlic, fresh ginger, and hoisin sauce. Stir thoroughly to create a smooth sauce.
  5. Sauté Vegetables and Beef: Add the chopped bell peppers and spring onions to the instant pot. Set the pot to sauté mode and stir fry the vegetables for about 3 minutes with the cooked beef, allowing them to soften slightly while blending flavors.
  6. Add Sauce and Caramelize: Pour the prepared sauce over the beef and vegetables in the pot. Continue cooking on sauté mode for an additional 3 to 5 minutes, stirring frequently, until the sauce thickens and caramelizes, coating all ingredients.
  7. Serve: Serve the Instant Pot Pepper Beef hot, ideally accompanied by steamed white rice garnished with the chives from the spring onions for added freshness and aroma.
