Instructions
- Sear the Beef and Sauté Vegetables: Turn the Instant Pot to sauté mode, add olive oil, diced onions, garlic, and beef stew meat. Sear the beef until browned on the outside. Add chopped celery and sliced carrots, sauté for about 3 minutes to enhance the flavors, then turn off the sauté mode.
- Add Potatoes and Tomatoes: Incorporate the quartered red potatoes and two cans of stewed tomatoes into the pot with the beef and vegetables, mixing well.
- Pour in Broth and Adjust Liquids: Pour the 48 oz of beef broth over the ingredients. If the liquid level does not reach the Instant Pot fill line, add water as needed to prevent burning and ensure proper pressure cooking.
- Season the Stew: Add salt, pepper, oregano sprigs, and basil leaves on top. Give the mixture a good stir to distribute seasonings evenly.
- Pressure Cook: Secure the lid on the Instant Pot and close the valve. Set the pot to high pressure for 20 minutes. Once cooking finishes, perform a quick pressure release to release the steam safely.
