For the Beef:
- 2 cups low sodium beef broth
- 1 packet au jus gravy mix
- 2.5 lbs top round roast
- 3 bell peppers (cut into strips)
- 1 0.7-oz pack Italian salad dressing mix
For the Sandwiches:
- 8 hoagie rolls
- 8 slices provolone cheese
- 16 jar sliced pepperoncini
Instructions
- Mix the Broth and Seasoning: Combine beef broth and au jus gravy mix in the crock-pot. Add the round roast and bell peppers. Sprinkle with Italian salad dressing mix.
- Cook the Beef: Cover and cook on high for 4 to 5 hours or on low for 8 to 10 hours.
- Shred the Beef: Remove the roast, shred it with forks, and return it to the crock-pot.
- Assemble the Sandwiches: Layer provolone cheese on the hoagie rolls, top with the beef and peppers, and add pepperoncini. Optionally, moisten the top half of the roll with cooking liquid or serve the broth on the side for dipping.
