Scale
Fruit Layer
- 1 cup Smucker’s® Red Raspberry Preserves
Crust and Topping
- as needed Nonstick Cooking Spray
- 1 1/2 cup Butter
- 3/4 cup Granulated Sugar
- 3/4 cup Brown Sugar
- 3 cup All-Purpose Flour
- 1 1/2 cup Old Fashioned Rolled Oats
- 1/2 teaspoon Salt
Instructions
- Prepare Oven and Pan: Heat oven to 350 degrees F (180 degrees C). Coat a large baking pan with nonstick cooking spray, butter, or line with parchment paper to prevent sticking.
- Cream Butter and Sugars: In a large bowl, beat 1 1/2 cups butter, 3/4 cup granulated sugar, and 3/4 cup brown sugar with a mixer on medium-high speed until the mixture becomes light and fluffy, creating a smooth base for the crust.
- Mix Dry Ingredients: Add 3 cups all-purpose flour, 1 1/2 cups old fashioned rolled oats, and 1/2 teaspoon salt to the butter mixture. Mix on low speed until all ingredients are thoroughly blended to form the dough.
- Form Crust and Reserve Dough: Measure out 2 ½ cups of dough and set aside for the topping. Press the remaining dough evenly into the prepared baking pan to form the crust layer. Bake this crust for 15 minutes until it sets slightly.
- Layer Preserves and Topping: Remove the crust from the oven. Stir 1 cup raspberry preserves gently, then spoon it evenly over the warm crust. Finely crumble the reserved dough over the raspberry layer to create the topping.
- Final Baking and Cooling: Bake the bars for an additional 30 to 35 minutes, or until the topping is lightly browned. Once baked, cool completely in the pan on a wire rack. Cut into bars, serve, and enjoy your delicious homemade jam bars.
Notes
- You can substitute raspberry preserves with other fruit preserves like strawberry or apricot for different flavors.
- For easier removal, line the baking pan with parchment paper extending beyond edges to lift the bars easily after cooling.
- Store bars in an airtight container at room temperature for up to 5 days or freeze for longer storage.
- Use cold butter for best crumbly texture in the crust and topping.
