Ingredients
- 1 tablespoon Butter
- 15 ounce Corn Kernels
- 1 bunch Scallion
- 1 tablespoon Mayonnaise
- 1 teaspoon Granulated Sugar
- Kosher Salt, to taste
- Freshly Ground Black Pepper, to taste
- 2/3 cup Mozzarella Cheese
- Cayenne Pepper, to taste
Instructions
- Preheat the Oven or Grill: Heat the grill or broiler setting of your oven to medium or preheat your oven to 350 degrees F (180 degrees C) to ensure it’s ready to melt and brown the cheese perfectly.
- Sauté the Corn: Melt the butter in a small or medium-sized ovenproof saucepan or cast iron frying pan over medium heat. Add the corn kernels and fry them for 4-5 minutes, allowing some char marks to develop for added flavor.
- Cook the Scallions: Add the scallions to the pan and stir-fry quickly for 1 minute to combine their flavor with the corn, then remove the pan from the heat.
- Mix in Seasonings: Stir in the mayonnaise and granulated sugar, then season with kosher salt and freshly ground black pepper to taste. Mix everything together thoroughly to create a creamy, balanced base.
- Add the Cheese and Cayenne: Evenly spread the mozzarella cheese over the corn mixture until fully covered. Lightly sprinkle cayenne pepper on top to add a touch of heat.
- Bake to Melt and Brown: Place the pan under the broiler, grill, or in the oven and bake for 5-8 minutes until the cheese melts completely and develops golden brown spots.
- Rest the Dish: Remove from the oven and allow the dish to rest for 2 minutes before serving, helping the flavors to meld and the cheese to set slightly.
- Serve: Dish out and enjoy this rich, creamy, and flavorful Korean Corn Cheese as a comforting snack or side dish.
Notes
- You can use fresh or frozen corn kernels, just ensure any frozen corn is thawed before cooking.
- If you don’t have a broiler or grill, baking at 350°F until cheese melts is a good alternative.
- Adjust the cayenne pepper amount to your preferred spice level or omit if sensitive to heat.
- For a richer flavor, you can substitute some mozzarella with cheddar cheese.
- This dish is best served immediately to enjoy the melty cheese texture.
