Instructions

  2. Sauté the Corn: Melt the butter in a small or medium-sized ovenproof saucepan or cast iron frying pan over medium heat. Add the corn kernels and fry them for 4-5 minutes, allowing some char marks to develop for added flavor.
  3. Cook the Scallions: Add the scallions to the pan and stir-fry quickly for 1 minute to combine their flavor with the corn, then remove the pan from the heat.
  4. Mix in Seasonings: Stir in the mayonnaise and granulated sugar, then season with kosher salt and freshly ground black pepper to taste. Mix everything together thoroughly to create a creamy, balanced base.
