Tomato Dressing
- 12 cherry tomatoes, quartered

Noodles
- 100g buckwheat noodles

- 1 red onion, halved and sliced
- 1 carrot, cut into matchsticks
- 1 red pepper, deseeded and sliced
- 100g shredded white cabbage
Lamb & Herbs
- 200g lean lamb loin fillet or steaks, diced
- 4 tbsp chopped fresh mint
Instructions
- Prepare the Tomato Dressing: Lightly squash the quartered cherry tomatoes in a bowl and mix with 1 teaspoon of fish sauce, the juice and zest of one lime, and 1 tablespoon of sweet chilli sauce until combined. This creates a fresh, tangy, and slightly spicy dressing.
- Cook the Buckwheat Noodles: Following the package instructions, cook the 100g of buckwheat noodles until tender. Drain and set aside while preparing the rest of the dish.
- Stir-fry the Vegetables: Heat 2 teaspoons of rapeseed oil in a wok or large frying pan over medium-high heat. Add the sliced red onion, carrot matchsticks, and red pepper slices. Stir-fry for about 5 minutes or until the vegetables begin to soften.
- Add the Cabbage: Add the shredded white cabbage to the wok and continue to cook the vegetables for a few more minutes until the cabbage wilts and everything is tender but still crisp.
- Cook the Lamb: Remove the cooked vegetables from the pan and set aside. In the same pan, add the diced lamb loin and cook over medium-high heat for 5 to 8 minutes, until the lamb is just cooked through but remains tender and juicy.
- Combine All Ingredients: Remove the pan from the heat. Return the vegetables to the pan and add the cooked noodles, tomato dressing, and chopped fresh mint. Toss everything gently together to combine the flavors well.
- Serve: Plate the lamb, noodles, and vegetable mixture immediately. The dish is best enjoyed warm with its vibrant combination of textures and flavors.
