Ingredients

Scale

Sweet Potato Wedges

  • 1 large sweet potato (about 190g), cut into wedges
  • 15g coconut oil
  • Salt, to taste

Turkey Burgers

  • 260g turkey breast mince (under 5% fat)
  • 1 small red onion, diced
  • 1 garlic clove, grated
  • 1 large egg, beaten
  • 1 apple (about 70g), peeled and grated
  • 2 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper, to taste

Green Vegetables

  • 135g green vegetables (spinach, kale, broccoli, mangetout or green beans)

Instructions

  1. Preheat oven and soften sweet potatoes: Preheat your oven to 180°C (160°C fan)/gas mark 4. Place the cut sweet potato wedges in the microwave and cook on full power for about 6 minutes until they are just turning soft. Let them rest for 30 seconds after microwaving.
  2. Prepare turkey burger mixture: While the sweet potato cooks, combine the turkey mince, diced red onion, grated garlic, beaten egg, grated apple, dried oregano, paprika, salt, and pepper in a large bowl. Use your hands to thoroughly mix the ingredients together until fully incorporated.
  3. Shape and bake the burgers: Divide the mixture into two portions and form two burgers approximately 3 cm thick. Place the shaped patties on a baking tray and cook them in the preheated oven for 15 to 20 minutes, or until fully cooked through.
  4. Cook sweet potato wedges: Heat the coconut oil in a large frying pan over high heat. Add the sweet potato wedges and shallow fry for about 3 minutes on each side until they are golden brown and cooked through. Alternatively, you can toss the wedges in the coconut oil and roast them in the oven for 15 to 20 minutes. Drain on kitchen paper and season with salt.
  5. Prepare green vegetables: Steam, blanch, or boil your choice of green vegetables until tender but still vibrant in color.
  6. Serve: Plate the turkey burgers alongside the crispy sweet potato wedges and green vegetables for a wholesome, balanced meal.

Notes

  • You can substitute green vegetables with any preferred seasonal greens for variety.
  • The apple adds a subtle sweetness and moisture to the turkey burgers, balancing spices nicely.
  • For a lower fat option, avoid frying sweet potato wedges and instead roast them in the oven with coconut oil.
  • Make sure the turkey burgers are cooked to an internal temperature of 74°C (165°F) for food safety.
  • Leftover turkey burgers can be refrigerated for up to 2 days and reheated thoroughly before eating.
