- 1 tsp tomato paste
- 1 carrot, sliced
- 1/2 cup broccoli florets, chopped
- 2 garlic cloves, minced
- 2 scallions, chopped
- 1/2 cup olives, whole
- 1/2 tsp basil (dry or a handful of fresh)
- 1/2 tsp coriander
- 1/2 tsp crushed red pepper (optional)
Finishing Touches:
- 1/2 cup feta cheese, crumbled
- Fresh basil (if using fresh)
- Salt and pepper to taste
Instructions
- Sautee Chicken and Eggplant: In a medium skillet, cook the chicken and eggplant in olive oil over medium-high heat for 4-5 minutes.
- Add Tomatoes: Add fresh tomatoes, cover, and cook for an additional 3 minutes.
- Stir in Tomato Paste: Mix in tomato paste and a bit of water if needed.
- Cook Veggies: Lower the heat to medium and add broccoli, carrots, scallions, basil, coriander, and crushed pepper. Cook for 3-4 minutes, stirring occasionally.
- Finish with Cheese: Stir in feta cheese, olives, garlic, and fresh basil. Cook for another minute until cheese starts to melt.
