  • 2 medium-sized tomatoes, chopped
  • 1 tsp tomato paste
  • 1 carrot, sliced
  • 1/2 cup broccoli florets, chopped
  • 2 garlic cloves, minced
  • 2 scallions, chopped
  • 1/2 cup olives, whole
  • 1/2 tsp basil (dry or a handful of fresh)
  • 1/2 tsp coriander
  • 1/2 tsp crushed red pepper (optional)

Finishing Touches:

  • 1/2 cup feta cheese, crumbled
  • Fresh basil (if using fresh)
  • Salt and pepper to taste

Instructions

  1. Sautee Chicken and Eggplant: In a medium skillet, cook the chicken and eggplant in olive oil over medium-high heat for 4-5 minutes.
  2. Add Tomatoes: Add fresh tomatoes, cover, and cook for an additional 3 minutes.
  3. Stir in Tomato Paste: Mix in tomato paste and a bit of water if needed.
  4. Cook Veggies: Lower the heat to medium and add broccoli, carrots, scallions, basil, coriander, and crushed pepper. Cook for 3-4 minutes, stirring occasionally.
  5. Finish with Cheese: Stir in feta cheese, olives, garlic, and fresh basil. Cook for another minute until cheese starts to melt.
  6. Season and Serve: Season with salt and pepper, then serve as is or with bread and a side salad. Enjoy!
